Developments: Léon, Poutinebros, Au Bureau, Pizza Cozy…

Restaurant brands continue to spread in France. Here is our new selection of openings.

¤ Leonthe restaurant chain specializing in fresh mussels and fries, is setting up in Besançon (25) and rolling out its new concept there. The Fish Brasserie of Besançon opened its doors on October 12, offering 173 seats indoors and 84 on the terrace. This place, completely renovated, presents the brand’s new autumn-winter menu. On the menu: classic Maroilles AOP croquettes, but also innovations (Léon mussels au gratin, Léon gratin with haddock and spinach, etc.). Establishment, 21e restaurant Léon in new concept, is run by Cyril Sautrot and Christophe Martet.

¤ Poutinebrosa restaurant chain specializing in Quebec poutine, opened its 1time franchise in Brest (29) on October 7th. This is the 3e brand restaurant. On the program, poutines, burgers and Quebec beers, in a warm and friendly place inspired by ice hockey. The restaurant can accommodate 140 guests, including 80 outdoors, and is run by Christophe Chabot and his wife.

¤ At the same time pub, brasserie and restaurant, At Desk opened a new unit run by Patrick Geslin on October 13 in Chaville (92). In an English pub decor, Au Bureau Chaville offers 101 seats indoors and 80 outdoors. On the menu, which changes twice a year, typical English dishes: fish and chips, burgers, accompanied by beers and cocktails. To date, Au Bureau has 173 stores, including 161 franchises.

¤ Pizza Cozy moved to Chartres (28) on October 19. This brand specializing in pizza and favoring short circuits and fresh products now has 57 establishments in France. On the menu of this new franchise, held by Kévin Dubosq, an original recipe with a PDO cheese from the region, Olivet cendré. The sale is made on site, to take away or in delivery.

¤ In Lyon (69), the Croix-Rousse district hosted on October 20 the 5e restaurant Chicken Time, under franchise. Specialized in street-food based on fried chicken, this brand offers it in all its forms: as is, in finger food, in burgers, rolls and even in salads. All served on site, for take-out or delivery. ¤ Bioburgera brand specializing in 100% organic burgers, opened its 14e restaurant in Issy-les-Moulineaux (92). This restaurant with 42 seats inside and around 40 outside, offers order terminals and table service. ¤ Sushi side opened a restaurant in Pau in October, (64) its 5e establishment in the region. The brand specializing in Nikkei cuisine (Japanese-Peruvian fusion) hopes to open 20 new restaurants this year.
